◆ Peppermint extract for baking is a dried whole grass extract of Mentha haplocalyx Briq., the volatile oil is the main active ingredient, which is customarily called peppermint oil or mint crude oil; a large number of colorless substances precipitated at low temperature are called Menthol; the oil that separates part of the menthol is called peppermint oil; the refined product of peppermint oil is called peppermint white oil.
